Tabbouleh Salad

Serves 6/8

Ingredients:

  • 1 cup Bulgur wheat soaked for an hour with lemon
  • Handful chopped mint
  • Handful chopped spring onion
  • Handful chopped coriander
  • Half amount of chopped parsley
  • 1 cucumber cubed
  • 1 tomato cubed
  • lemon
  • salt
  • olive oil

Method:

Drain the bulgur and discard the lemons, mix in all ingredients and season well with lemon salt and olive oil as desired.
