Beetroot Burgers

A great way to use up all those beetroot you’ve been growing. The burgers can be frozen and also taste fantastic in a wrap!
Makes about 6 small burgers


  • 1 grated fresh beetroot
  • 1 cup cooked brown rice
  • ½ onion
  • 2 cloves of garlic
  • 1 tbs vinegar
  • 1 cup of lentils
  • 1 spoon of mustard
  • 1tbs cumin
  • Handful chopped coriander
  • 1 egg
  • ½ cup breadcrumbs
  • oil for frying


Combine all ingredients in a bowl using your hands. Shape burgers to desired size and place on a tray and put into fridge, as this will help them hold their shape when cooking.
Preheat skillet to med-high with oil at your choice.
Fry both sides 3-4 mins each side.
