Vegetable Tagine

Serves 6/8

Ingredients:

  • 3 Tbs Olive Oil
  • 1-2 tbs ground cinnamon
  • 1 tsp cumin
  • 1inch fresh ginger minced ( 1 tsp ground ginger)
  • 2-3 tsp harissa paste
  • 1 large onion
  • 3 cloves garlic minced
  • 3 carrots – peeled & cut into 2inch pieces
  • 1 small pumpkin – peeled & cut into 2 inch pieces
  • 1 sweet potato – peeled & cut into 2 inch pieces
  • 1 zucchini – cut into 2 inch pieces
  • 1 stick celery cut into 2 inch pieces
  • Vegetable Stock – to cover approx 500ml
  • 10 dried apricots
  • ½ cup cooked chick peas
  • Handful raisons
  • 2 cups chopped tomatoes
  • Juice & Zest of 1 lemon
  • Salt
  • Fresh Cilantro

Method:

Put oil in Tagine and heat, add Cumin, Harissa, Cinnamon
Add carrot, potato, pumpkin, celery & fry for few minutes
Add stock and rest of ingredients - not zucchini
After 10 mins allow to simmer for 15 mins – add zucchini in last 10 mins of cooking
